- Sciatt -

Sciatt (pronounced with a ‘sh’ sound), in the Valtellinese dialect, literally means toad.
They are crispy round fritters made from buckwheat flour with melted cheese in the centre.


(for 4 people)
  • gr. 300 buckwheat flour
  • gr. 200 plain flour
  • gr. 300 casera cheese
  • half teaspoon of bicarbonate of soda
  • a handful of grated parmesan cheese
  • salt
  • lots of oil for frying
  • shot of grappa


Mix the two flours well with the salt, adding water until you make a smooth batter, then add the bicarbonate of soda, a handful of grated cheese and a shot of grappa.  Cut the cheese into cubes and add to the mixture.  When the oil is boiling, pick up a cube of cheese, taking care to cover it with the batter, drop it into the pan and leave it to become golden and crisp.  Add more to the pan and when they are ready remove them with a perforated spoon and serve them hot on a bed of chicory salad.
